From extremely old, ungrafted vines, grapes undergo a 15 day maceration and three months in Erik’s ancient amphoras, followed by 12-30 months in old oak before being bottled unfined, unfiltered and without sulphur. Pinot Noir that just admitted it was bitten by a werewolf – salt-cured raspberries, sun-baked seaweed on a rock, lifted, feral acid & a wildly energetic, roiling texture with a touch of extra C02 that can be easily decanted out. Truly singular stuff.
