Ultradition are his flagship cuvées, here with high-octane Meunier bringing a nutty, caramel note, while Chardonnay brings brightness and Pinot Noir delivers deep spice. Aged for an extra year and bottled with a smaller dosage, this succulent & polished Champagne is umami-rich and sings its own praises loud and clear – lobster thermidor, shiitake mushrooms, salted croquembouche, honeydew skin, peach fuzz & a small twist of grapefruit.
