He took over his family’s century-old Domaine in 2005, alongside a team of aunts, uncles and cousins who help him work the vineyards, which are certified organic with biodynamic practices. Ultradition are his flagship cuvées, here with high-octane Meunier bringing a nutty, caramel note, while Chardonnay brings brightness and Pinot Noir delivers deep spice. Aged for an extra year and bottled with a smaller dosage, this succulent & polished Champagne is umami-rich and sings its own praises loud and clear – lobster thermidor, shiitake mushrooms, salted croquembouche, honeydew skin, peach fuzz & a small twist of grapefruit. Depth, concentration, minerality, acid – all that and so much more from a Champagne with a distinct gravitational pull. Pair with jazz on vinyl & foie gras for dessert.
