A crisply mineral, clear and concise aligoté plucked from the depths of the constellations. High school friends Romain Dupont and Guillaume Bellon took over the 4.8 hectares on a glacial moraine hillside, converting to organic viticulture practices in 2021 and to biodynamic more recently in the name of the glory of their vines. NOT SO FUN FACT! 90% of the domaine fruit was lost in 2023, leading them to purchase additional grapes from trusted growers out of necessity to survive! This aligoté was purchased from Romain and Guillaume’s pals at Chateau de Rougeon and fermented in Savoie, with six months spent on lees between concrete and special (Selosse!) champagne oak barrels picking up traction. Green melon salad, cleansing mineral mixins’, squeeky cheese lactic energy, green apple skin meets grass whistling & Italian lemon soda. Enjoy during a super gush session with a friend after both reading your first Colette, you may never be the same, but thank goodness you can be not the same together.
