Like a precious, glittering stalactite, a growing fossil, composed of time and minerals. Superb winemaker Julien Guillot introduced biodynamic techniques to his family’s already organic 7 hectare estate in 1998, officially taking over in 2001. This stunner hails from three parcels of organic Pinot Noir on clay-loam soils, over pearly limestone slabs with polkadots of calcite-aragonite—picture clear-white crystal shards giving ample minerality. The grapes are pressed by foot and processed in the classic ‘Domaine Des Vignes du Maynes’ style, aka, with minimal intervention and spontaneous semi-carbonic fermentation in wooden vats. A lively red-fruit-tornado tearing through the village, picking up marshy minerals, pomegranate groves, chimney smoke, tanning leathers and fields of liquorice & rosemary flowers. A wee bit of insight from the winemaker himself, Julien says, “this is what you drink when you can’t decide what to drink!”.
