Here he makes wine naturally, no pesticides, extended lees aging, and minimal intervention in the winemaking process – all of which are rare in the region. This wine is all about the soil, composed of gneiss, a layered rock which allows for good root establishment and thriving vines with lots to say. Bursting with stone fruits, horseradish, seashells, creamed anise honey, salted kiwi & lemon juice. Pour alongside spicy nachos!
