The tenacity of these otherworldly delicacies is proof enough, aliens do walk among us! Charmingly genuine winemakers Patrick Bouju and Justine Loiseau are adored the world over, and join others at the peak of our beloved world of natural wine. Neither comes from a winemaking background but their tedious care, undeniable connection to the land & zero-zero philosophy is aspirational to say the very least. From some of their oldest vines at 80 years old, perched on slopes of mineral bestowing basalt, the yields are lower and the end product pristine. Gamay d’auvergne is a local variant of gamay that produces smaller grapes with thicker skins more resistant to disease. Semi-carbonic maceration for one week heightens the sapidity factor and brings in to focus the all encompassing aromatics. Aged in old barrels before being moved to sandstone amphora to soften the edges. CO2 sprinkles, sweet smoke, clairvoyant sour plum, salt serum, cornerstone minerality, gamey blood sausage & bitter herbs bring our lips, tongue and thoughts back glass after glass. An excellent bottle to sit on, much like a clucking spring chicken and her first eggs, see where time takes darling Lulu.
