Like drinking a densely layered thundercloud. Charming winemakers Patrick Bouju and Justine Loiseau are adored the world over, and sit amongst those at the peak of our beloved world of natural wine. Neither of them came from from a winemaking background, making their tedious care, connection to the land & zero-zero philosophy admirable to say the very least. The organic, textural mondeuse – think gamay procreating with cabernet franc – comes from a hilly, Savoie cru vineyard site that is cultivated by the celebrated Gilles Berlioz of Domaine Partagé. The fruit sees a short semi-carbonic maceration before one year in sandstone amphora, turning the tannic strength of mondeuse into a supple tongue sling. Woolgathering alpine storm, sucking a Kalamata olive down to the pit, blackberry stem + leaves, vigorous layers of minerality & cold spices. Enjoy with a fried chicken sandwich & listening to your fave 1960’s playlist.
