Organic & biodynamic, young vine (dry) Moscato di Noto, grown on dense calcareous-clay soils in the sun-soaked South of Italy. The grapes are picked early to maintain balance of acidity, destemmed – to avoid any bitterness from entering the wine, fermented in stainless steel at low temperatures to preserve aromatics & aged six months on lees to add texture. Apple cotton candy aromas, with lemony-apricot jam, pineapple weed, nutmeg & guava syrup viscosity. Drink when missing that Italian dream life you never actually had, but who has time for REaLitY anyways?
