Preservation is top of mind, both environmentally in their ambitious commitment to sustainable agriculture and in keeping traditions like the Kimoto method alive, a traditional and labour-intensive method used here that gives sake a luscious, creamy mouthfeel. Think of it like the Champagne method –more work but the results are incredibly worthwhile! Shizenshu is rich, luscious & umami-rich with a slight fruitiness, a kiss of sweetness & a clean, precise finish – maybe even a touch of spice! Would pair with everything from the most delicate omakase to a simple soy-brushed grilled chicken on rice. A perfect intro to organic and Kimoto sakes & a real joy to experience.
