A stylish, poised and fruit forward white from a renowned Chablis producer. Committed and accomplished winemakers and enologists, Alice and Olivier de Moor, often referred to as the parents of natural Chablis, reside in the small village of Courgis just seven kilometres southwest of Chablis. Their nine certified organic hectares are buzzing with life and encouraged by their experienced hands. A blend of pungent and ripe sauvignon blanc and voluptuous, rich sauvignon gris (purchased due to a hard production year, from a small parcel of organically farmed vines in the AOC Saint Bris), with macerated botanic and citric aligoté, and fortified by three barrels of lush chardonnay to fill in the gaps. All grapes are gently pressed and maturated between amphorae and old barrels that work to enhance the agile texture. Tangerine peel, peach tree picking, candied pineapple, ripe lemons abound, sweeping chalky minerality & a soft fruit cocktail ending. Enjoy with with spam grilled cheese or jambon chablisienne.
