Revel has been on a mission, essentially since their inception: to make the perfect PERRY (Perry = fermented pears aka 'pear cider'). Over the hill and through the woods, you will find Tariq, master fermenter & experimental-wizard. His vision of combining farm-grown and foraged fruits with botanicals & a whole lotta love are just a few factors that set them apart from what you think of Ontario cider. Perry is often low in alcohol and acid (nature's preservatives), making perry a bit more challenging of a ferment. ‘Pera’ is 100% Bartlett, and smells like a perfectly ripe pear — it's powerful and intoxicating. There's a fresh, floral note to it that's so specific to tree-ripened Bartlett. It drinks like cutting into a pear at its absolute prime. Pour alongside listening to ‘Peach, Plum, Pear’ by Joanna Newsom.
