Dating back to 1920, as a small canning company in Galicia, Ramón Peña began with the careful production of fish and seafood preserves. Utilizing the raw materials and precious artisanal processes from the origin, they have continued producing authentic luxuries for the senses ever since! The small horse mackerels are selected at the port from fishing boats of the Spanish Galician Rias. Harvested in the Cantabrian sea, horse mackerel is a species of jack mackerel, also known as the common scad. Grilled and toasted, the mackerel is then hand packed with olive oil. Flaky, firm and frightfully flavourful. Pair with salty mascarpone or piled over warm sushi rice with pickled ginger, a drizzle of soy sauce & a tipple of savoury sake.
