The drinkable version of ‘Conch Shell’ by Pantone. Located in the Montagne de Reims, Benoit began working with biodynamic practices in 1996, and has been certified since 2010. Known for doing almost all farming with his horse Tamise (talk about Disney movie plotline). He is mostly known for his pinot noir based wines from the grand crus of Bouzy and Ambonnay. 100% pinot noir made with the saignée method from 40+ year old vineyard sites. Macerated whole cluster for 18 months in stainless steel – that’s all it takes to produce this unshakable trophy of a rosé. Creamy and fine, blustery bubbles, mashed strawberry on milk toast, red currants, with a brushstroke of herbaceous-ness painted across its torso. Pour for Christmas morning brunch, xoxoxo Santa C.
