Fermented with wild yeasts, the wine was aged for five months in neutral French oak & bottled without fining or filtration. Sour cherry, cranberry cocktail, rhubarb bitters with a slight white pepper vibe and a slightly pithy, bitter finish. Pair with tiny tops, big bottoms and French bistro staples.
