Just a hummingbird sittin’ under a tree, contemplating aerodynamics, listening to its own heartbeat. Winemaker David Eiberg sits in the emerging growing region of Creemore Hills & continuously brings delicious local fair we cannot wait to open. After a challenging 2021 growing year, David says that the earlier ripening grapes, such as Pinot Noir, came through best & he was very happy with the more subtle fruit profile found here than in recent vintages. The fruit was 50% whole cluster fermented with gentle punchdowns to extract flavour and structure from the skins, before resting in concrete egg for seven months on fine lees. Sour plum, liquorice tea, pink rose petals, red grapefruit sorbetto & soil. Drink on an overcast afternoon before going to bed at 9pm, happy Autumn.
