Extrude me into a waffle cone and serve me up cold! Experienced winemaker, Mackenzie Brisbois, is delivering minimal intervention wines from PEC that are fantastically fun. A challenging Ontario vintage for later ripening grapes such as Viogner due to the heavy Fall rain. ‘Soft Serve’ is sourced from the red clay soils of the Grimsby Hillside Vineyard in Niagara – the site of some of the first vine plantings ever done in Niagara! Pressed to barrel, fermented naturally and aged for 7 months on original lees for a round and finely textured indulgence. A reductive wine giving caramel dipped corn nuts and ground cloves opening up to more classic Viognier notes like peaches and spring blossoms. An oily texture on the palate with a breezy & vibrant finish. Drink while mattress surfing in an Ontario hay field at 3am, but oh no – you forgot, you’re allergic to hay!!!
