Stávek planted local varieties Rubinet and Sevar in 2012, two deeply-coloured hybrid grapes made for production specifically in the Czech Republic. The grapes from these young vines are whole bunch fermented and foot-stomped afterwards, followed by 10 months in barrel, producing a violet-hued red wine that is surprisingly lean and fresh, bursting with blackcurrants, cassis and seeded Concord grapes. A juicy, mineral-driven structure follows, unencumbered by heavy tannins or high alcohol, rounding out this dangerously drinkable lil’ oddball with a degree of finesse and complexity far beyond its years. Pair with Cuban cigarillos lit by candlelight and bare feet on a plush Persian rug.
