Former biologist Jacques Perritaz left his job to become a winemaker but instead found himself drawn towards the old, abandoned fruit trees of Fribourg. His ciders are Ground Zero for inspired & evocative ciders with a real sommerlier’s sensibility. Made from a blend of foraged, near-extinct heritage varieties, this is the first time this dry, organic cider has been bottled in 330ml, an entry-level offering that, as the name implies, is meant for maximum drinkability. Crispy, slightly bitter, and aromatic with notes of aniseed and cooked citrus with a slight funk and tannin. Drink with a hard, salty cheese like Lindsay Bandaged Goat for a lip-smacking pairing of your own.
