Shells and all! Think almonds, walnuts, chestnuts, pine nuts, hazelnuts, brazil nuts, pistachios – raw, dried, roasted, toasted, baked, buttered and extracted. You will typically find wines with oxygen exposure, extended aging, lees aging, fermentation under flor (yeast film) & malolactic fermentation. For those whose favourite ballet is The Nutcracker & favourite Subway cookie is white chocolate + macadamia nut.
