Winemaker Jas Swan is an experienced traveller, openminded creative, vocal supporter of the queer community & proud part of the new wave of natural German wine. Her creations play with sensory experience, low alcohol, foraged foods & evocative character, all churned from her unique vision. The organic merlot is farmed by Jas on low-intervention winemaker and grower Andi Mann’s limestone-clay soils in Eckelsheim. An homage to the Ardéche, the merlot was whole bunch macerated to pull structure, aromatics and certainty we gulp down with glee. Midnight air, sexy, anything is possible, tiny clove cigs shared on a cedar bench, grassy field, nibs, pomegranate puree, hibiscus, smashed rocks, sage brush & plucky tannins. Enjoy with wild boar terrine, sausages, shoulder or tenderloin.
