A crisp and mineral shooting star of an aligoté, available for the first time in Ontario! A leader in organic and biodynamic viticulture, non-interventionist winemaker Sylvain Pataille grew up in and around vines spurring him into attending winemaking school in Beaune, finding his own vines and working as consulting oenologist for some of the region’s most famed domaines. Sylvain got his first hectare of vines in 1999, and slowly grew into his now 14 hectares of owned and rented land, home to aligoté, chardonnay and pinot noir. FUN FACT! He is a founding member of the Aligoteurs Association, which is dedicated to the defense of the aligoté grape variety! Citric concealed minerality, gardenias between grass, tarragon infused honey, green pear, waxy apple, lees weight & milking a jersey cow. Try with your fave noodle shape and a white clam sauce.

Lucky You indeed! Oldies but goodies Sauvignon Blanc & Chardonnay move to Brooklyn, get lightly tattooed, & have the sexiest messy ponytails you have ever seen. Lucky You is like falling in love with your best friend, a glass of house white wine in perfect punk rock heaven, a blend of 70% old vines Sauvignon Blanc & 30% Chardonnay. Grapes are whole cluster pressed into stainless steel, unfined & unfiltered with a minute amount of added sulphites. Continuing to grace us with a more mineral core than when we first met ‘Lucky You’, 2023 is acacia honey, bitter lime leaf, soft pear meeting wet stone and gauzy golden silk, a wet, resinous dank-ness & eating an apricot in a field of white flowers. Lucky You makes us crave a dimly lit bar in a major international city: marble countertops, white linen shirts & raw edge denim, phone number scrawled on a cocktail napkin in ballpoint pen.

One clean and classic Chablis, please! This classic Burgundian white from Sylvain and Didier Defaix is known for its steely fresh profile and nervy tension, a well-loved rebuff against Chardonnay naysayers & a tip of the hat to fancy pants everywhere. Defaix has quietly risen to the top ranks of Chablis producers, delivering poetic, elegant wines at an unbeatable price. Harvested from 30 year old vines, the wine was fermented in tank, then aged for 10 months on the lees to contour some of that angularity with textural levity. When we talk about a classic Chablis profile, this is it – bone-dry and crisp with sunshiney bright acid, a violin twang of high-wire citrus and ripe yellow apple flavours with a smart, mineral finish. Drink now or forever hold in your cellar, this Chablis will always fit in perfectly, the polyglot wine of your dreams! Pair with scallops and your slinkiest fit.
