An earthy, animalistic and zero-zero southern charmer. Since leaving his former mentor Gerald Oustric of Le Mazel, Sylvain Bock has settled in the town of Alba-la-Romaine, acquired seven hectares of organically certified vines, and begun producing natural wines everyone should be on the look-out for. The blend of juiced-up, floral gamay (85%) and meaty, spiced syrah (15%, which he uses often in his wines to round out acidity) come from basalt and limestone soils, spend one week carbonically macerating and eight months in tank settling down without outside influence. Pimm’s Cup, sour blueberry, chalk dust, pomegranate syrup, fur, empty cave & a sarsaparilla, root-beer-earthy richness. Pour alongside duck gumbo.
