Grüner Veltliner & Sauvignon Blanc, Burgenland, Austria 

A savoury, and mineral Austrian white blend for star-gazers. Reverred winemaker Christian Tschida cultivates 14 hectares of old vines near Lake Neusiedler in Burgenland, Austria, some of which have been tended by his family for four generations. FUN FACT! Christian uses extremely light pressure (he compares it to a handshake) when pressing his grapes and returns the remaining grapes back to the vines (after a short preparation) to aid the health of the vineyard! The citric, verdant and tropical-leaning blend of gruner and sauvy b for ‘Himmel auf Erden’ are picked by hand, crushed by foot and fermented and aged in large wood barrels for one year to steady themselves. Elderflower, candied kumquat, white tea, dried grass, cucumber, white peach, lemon drop, green ginger, a salty minerality & baked walnuts. Pour alongside chawanmushi and grilled mackerel.
