In the teeny, tiny appellation of Roche aux Moines or ‘Rocks of the Monks’, it is all about savoury, oxidative, long-lasting Chenin Blanc. The unique volcanic plateau has a history of production dating back to a 12th century Cistercian monastery and it’s easy to see why, with bottles still prized and collected around the world. The Clos de la Bergerie vineyard is in the middle of the famed property on a gentle, east facing slope. There, 40-year-old vines are planted at high density and aged for 5 months in used oak barrels developing complexity. White flowers pressed in a lover’s diary, honey drizzled peaches and fresh linens drying in a breeze. With firm structure, and firm acidity, do not be afraid to age this, allow it to warm up in your glass or pair with a main course. So universally delicious, it is impossible to not be charmed by.
