Gamay Petit Grain & Pinot Fin, Burgundy, France
A seriously RARE Burgundian liquid of legend. From the beginning, Julien Guillot’s familial land has never known pesticides, always cultivated with the greatest respect for the soil. All impressively old, their vineyards are surrounded by a mystical old growth forest, pillared by ancient stone dwellings. Highly governed, Fine de Bourgogne is the result of the distillation of the fine lees of a wine, and designates spirits that have been aged in wood for at least three years, allowing the alcohol to evaporate slowly, a process referred to as “the angels' share”, #wow. In this case, the Fine is aged for 15+ years, and comes to as an elegant and refined spirit, turned to smoothness like a stone by the tide and washed ashore encrusted in living complexity. FUN FACT! Fine de Bourgogne can be kept for several YEARS after opening, the cork will not dehydrate and the alcohol will not evaporate! Julien’s Fine is produced by distilling the lees of forest fruited and spiced gamay petit grain, and ancient pinot noir clone, pinot fin (from the domaine’s biodynamic vines, a rarely planted grape that can ONLY be found in some parts of Burgundy!) with local spring water. Moist ginger, molasses and spices, dried cherry, peaty smokiness, littoral caves & royal flower gardens. Enjoy out of a chilled glass after all the best meals of your life, a new ritual of sorts.
