A stupendously rare, and expertly aged, world class vin jaune. The famous wines of Bénédicte and Stéphane Tissot are prized, punctuated & polished. Working with as minimal cellar intervention as possible and great biodynamic care in the vineyard, they represent the height of Jura excellence. The savagnin grapes are hand-harvested from the clay-rich, “En Spois" vineyard, fermented, and then underwent seven years of oxidative aging under a veil of yeast (or, sous-voile) in old oak barrels without topping up to CONCENTRATE! Roasted black walnuts, hazelnut spread, macadamia nut cookie meets gingerbread, dried apricots, salt, maple water, peach skin, briar rose, forest fresh mushrooms, fresh hay & spiced cream. Pour after your grandpa’s 80th birthday dinner, real recognizes real.
