Their aim is to ferment wines that carry the purest expressions of their land & local grapes. Grown on poor clay calcareous rocky soil (trust us the grapes LOVE it) with lots of stones (aka canto rodado). The grapes got an early wake up call and were harvested at dawn, brought cold n’ fresh to the winery to preserve all of the aromatic intensity, and left on skins for three months to bring tannic structure to this pleasantly pungent grape. Onion skin in colour, white peach tea, passionfruit nectar, ripe quince, basil stem, bitter orange & teeny white flowers. Try with the Vietnamese dish Cá Kho Tộ, aka caramelized and braised catfish.
