A zealous red blend from a coveted south of France producer, available for the first time in Ontario! Axel Prüfer spent time working with many luminary winemakers (think Jean François Nicq of Les Foulards Rouges and Eric Pfifferling of L’Anglore) before forming his domaine, Le Temps des Cerises, in 2003. Today he farms and works in a zero-zero fashion, his flourishing vineyards surrounded by woods and bulging with biodiversity. FUN FACTS! The faded label indicates that some vines are still in organic conversion as this cuvée is made from a parcel that Axel recently acquired, each year the label will have more colour as the vines reach full organic conversion, #GOORGANIC! The younger vines of floral grenache (30%), mineral merlot (30%), spiced cabernet sauvignon (15%), berried syrah (15%) & smokey alicante (10%) were harvested over the course of a month, with each variety seeing a three day maceration before the final gathering. Wild fruiting forest bramble, rose buds, ashy accents, underripe black cherry CRUNCH, winter savoury, pepper mill, chalk dust tannins & vanilla pod earthiness riding gravel coattails. Enjoy on a dock, counting the fuzzy ducklings as they paddle aimlessly to and fro.
