A stupendously delicious, precise, earthen and spiced volcanic gamay to honour and age. Founded in 1997 in the Côtes du Forez region of the upper Loire Valley, the domaine has been organically farming since 2001, Demeter biodynamic certified since 2009, and harvests by dedicated hand exclusively. Today Gilles Bonnefoy carefully works his diverse, Forezian terroirs, with a highlight of the granitic and volcanic soils that were formed in the tertiary era – at the same time the Alps were rising! ‘La Madone’ is made from gamay grown on basalt soils that was destemmed, before spending a short stint on skins and ageing in amphora to soften and ignite. Overripe strawberry richness meets sour cherry bite, jolly spice, wild rose, meaty might, black salt, ash, tree trunk & a flinty minerality. Pour alongside your favourite shawarma.
