An un-oaked blend of green and acidic sauvy b (which, FUN FACT, originated in Bordeaux!) with a splash of waxy sémillon to fill out the palate. Bright like a lighthouse in the distance, crisp melon, celery snap, oolong tea, gardenias, green apple in the grass, squeezed citrus + zest & gravelly minerality. Try with fennel salad & spreadable goat cheese.
