Winemaker Pascal Biotteau of Mary Taylor works with small scale growers who showcase proper care, with the desire to share wines that are reflective of their individually tasty terroirs. An un-oaked blend of green and acidic sauvy b (which, FUN FACT, originated in Bordeaux!) with a splash of waxy sémillon to fill out the palate. Bright like a lighthouse in the distance, crisp melon, celery snap, oolong tea, gardenias, green apple in the grass, squeezed citrus + zest & gravelly minerality. Try with fennel salad & spreadable goat cheese.
