A classy, gamey and herbaceous red Burgundy for archeology nerds. Oenologists Sophie and Matthieu Woillez purchased their historic, 15-hectare domaine in 2009, converting to organic practices and working to showcase their clay-limestone soils teeming with marine fossils. Made from a blend of their own pinot noir, as well as pinot from neighbouring vineyards, the grapes are destemmed for purity and aged in vats for six months to cool their red-hot, red-fruit jets. Red is the name of the game here, with a redcurrant, cherry and raspberry front cover feature, peppercorn spill, pine forest in fall, astringent herbal tea tannin & a bristly gaminess. An incredible value Burgundy that knocks it out of the park with exceptional quality and depth of flavour. Enjoy with chicken and gravy til your eyelids grow heavy.
