Montreal born, globally experienced winemaker and Chablis force since 2008, Patrick Piuze is not a vineyard owner, instead he hunts down old vines from top notch growers and picks the fruit by hand himself. “I try to find with humility my identity as a winemaker in the splendour and diversity of the Chablis terroir.” - Patrick Piuze. The 35-year-old vines come from a single vineyard named "Les Boutots”, located in the village of Vaulicheres, east of the village of Chablis, and resting on revered Kimmeridgian limestone soils. White lime flowers greet you at the door, pile of wet oyster shells, fibrous green mango, green apple apex, a teaspoon of Tahitian vanilla & a smack of your own saliva. Enjoy with pesto pasta salad out of a tupperware.
