Winemaker Patrick Desplats is ground breaking in his seemingly bygone era approach, however the more we taste his wines the more we believe he has everything sweepingly figured out and we may just be aliens in skin suits meandering about. Co-founder of Domaine Des Griottes (2000-2010), before splitting over the ultimate question, “to plow or not to plow”. He says NO PLOW, a resolute champion, advocating for all that is good and green. Patrick sincerely practices what he preaches, and all from the comfort of his un-electrified shack, surrounded by his ever growing wine forest™ (yes, he is training vines up trees!). ‘Brahma’ is a brand new pup to the Desplats litter. Raised in Patrick’s unlined Georgian qvevri buried in his quevri garden™ (!). A light maceration before pressing to amphora where the wine goes through malolactic fermentation & spends 12-16 months underground, synchronizing its inhales & exhales with those of the Earth. Pleasantly overwhelming aromatics, chewy bitterness, fall pears, abandoned solarium, mineral sway & mouth-overflowing texture – the most open & drink now of the Desplats wines we have tasted. Pour alongside showing a child Alice in Wonderland (1951) for the first time.
