Nizza, Italy
A lifted, powerful runner sprinting its way to your table side. Two old friends – one an oenologist, the other a lawyer – turned winemakers, looking after grapes in the Nizza Monferrato region of Piedmont, Italy! FUN FACT! Grignolino vines were prized as far back as the thirteenth century, a rare regional jewel that is such a treat to share. Made from two small plots of organic vines, on calcareous-sandy soils. Macerated for 15 days before eight months of aging in Tava amphoras (amphoras that are cooked at extremely high temperatures, tightening the porosity to that of an oak barrel without the oak taste, cool!). Aromatic harmonies, a fruit explosion of candied cranberry, viscous pomegranate, sour cherry, bitter botanicals, sumac & finishes with a bit of Maldon melting on your tongue. Pair with salumi sandos!

A rare and lucky love triangle, as could only be concocted in the Loire valley’s Saumur region. From winemakers Emeline Calvez and Sebastien Bobinet we are gifted this organic and youthful Cab Franc, Pineau d’Aunis & Chenin blend. A mix of direct pressing and maceration concocts a vibrant, greedy nose and striking colour – imagine if Pantone had a colour called ‘blushing candy lobster’. The ‘Piak! rosé’ is serving salted raspberry sorbet, crunchy Fuji apple skins, grapefruit mint leaves, cherry taffy pull & watermelon juice squeezed on acacia wood. ‘Piak! rosé’ is ready and waiting to run with you through the brambly forest bushes and cannonball naked into a bottomless country pond. Made in the traditional champagne method, ’Bombolla’ undergoes a second ferment in bottle, adding increased complexity and tight, persistent bubbles. Uniquely, no dosage is added aka there is absolutely no residual sugar in bottle! Jolly green apple, lemon pith, whole grain pastry, Mediterranean herb garland, underripe white peach & dappling aniseed.
