Grégory Perez studied oenology in Bordeaux before returning to make wine in Bierzo, one of the northernmost and highest altitude regions in northwest Spain. His vines thrive on high altitude, rocky sites that give this crisp & mineral-driven white an enchanting complexity with a distinctly crunchy, herbaceous quality. Predominantly Godello with a splash of Doña Blanca, the grapes were gently pressed and fermented at low temperatures to preserve their fresh fruit character, then lightly filtered before bottling. Irresistible lip-smack of tart green apple acid with notes of preserved lemon, unripe green pear, fancy tonic, bouquet garni & wet granite with a slightly bitter finish. Make this the first thing you open at your next dinner party and you’ll undoubtedly turn heads for all the right reasons.
