His vines thrive on high altitude, rocky sites that give this crisp & mineral-driven white an enchanting complexity with a distinctly crunchy, herbaceous quality. Predominantly Godello with a splash of Doña Blanca, the grapes were gently pressed and fermented at low temperatures to preserve their fresh fruit character, then lightly filtered before bottling. Irresistible lip-smack of tart green apple acid with notes of preserved lemon, unripe green pear, fancy tonic, bouquet garni & wet granite with a slightly bitter finish. Make this the first thing you open at your next dinner party and you’ll undoubtedly turn heads for all the right reasons.
