A glou-glou South-of-France wine dancing between the margins of a rosé and light red built from flowers, fruits and fractured rocks. In 2012, Frédéric and Elaine took over 25 acres of old vines on the schist soils in Faugères that had been organically farmed for twenty years prior. FUN FACTS! Winemaking in the area dates back to Greek times and today boasts the highest percentage of organic vineyards of any AOC in all of France – with almost 50% of farmers working organically! ‘Clair des Champs’ was made by co-fermenting whole citric, floral terret blanc and spiced, meaty carignan grapes in direct pressed berried, botanical mourvèdre juice. Salt, flower bed, ripe raspberry, a meaty, amino acid-rich umami & light, grainy tannins. Frédéric has recommended you enjoy with dry aged fish - check out our local faves Affinity for suggestions.
