A resinous, verdant and wild-berried rosé perfect for every season, locale and meal. Winemaker Nicolas was born in Aveyron, brought up in Paris & operated a well known Parisian natural wine bar before pursuing the life of the vigneron in the same appellation as his great-grandfather. Surrounded by fruiting forests, his vines grow from hard, stoney and clay-crowded soils, and his work is extremely low intervention, with a specific focus on showcasing the elegance and STAR POWER of the late ripening, local red grape, fer servadou. Old vines of floral, berried and green fer servadou come from the ‘Maximus’ (link here) vineyards, and see one week of whole bunch maceration, a gentle pressing, and aging in old ‘Selves’ barrels, which leaves its friendly, ghostly imprint. Jalapeños, pine resin, strawberries and salmonberries, smoked white pepper, vanilla bean & a gentle structure – that all together amount to a lively cab franc-esque vibe if you’re looking for a cute lil reference point. Pour alongside anything from stuffed gourds, to creamy curries, frozen tv dinners to grilled sausages.
