When we’re deep in the throes of our own personal telenovela, we reach for this deep, refreshing rosé from Ramon Parera and Jordi Anan of Celler Pardas, longtime fixtures of Catalonia’s natural wine scene. Working out of an ancient cellar surrounded by wild, Mediterranean forest, the pair cultivate historical grape varieties like Sumoll, a dark red grape that makes for a wonderfully satisfying rosé, light on its feet and a total freakin’ delight to drink. After a short maceration in hundred year old concrete tanks, it emerges linear, fresh-faced and richly fruited – red apple peel, raspberry popsicle, anise, salt-cured green herbs & the first fresh figs of summer with a radiant, slightly bitter finish. Relish it with the best fatty bits and an evening fire.
