After a short maceration in hundred year old concrete tanks, it emerges linear, fresh-faced and richly fruited – red apple peel, raspberry popsicle, anise, salt-cured green herbs & the first fresh figs of summer with a radiant, slightly bitter finish. Relish it with the best fatty bits and an evening fire.
