Founded by Stéphanie Courtault and her husband Vincent Michelet, the winery now includes 27ha of exclusively Chardonnay vines. The grapes are picked from 30-40 year old vines, fermented in stainless steel where they are allowed to go through malolactic fermentation (think round and creamy) & aged on fine lees for 10 months, adding further roundness. A pale, golden robe, bergamot, lime flowers, fresh bread, orange oil & a well integrated, salty-mineral finish. Drink alongside a breakfast smoked lox bagel & have a great rest of your Wednesday!
