Tasting pristine Chablis is like looking through a glass-bottom boat into another ecosystem full of secret-holding residents. An eight hectare operation first founded in 1895, the now fifth generation father and son team of Gérard and Lilian Duplessis have a reputation for their “immortal”, age‐worthy wines and are an excellent reference for the greatness of Chablis.
