An eight hectare operation first founded in 1895, the now fifth generation father and son team of Gérard and Lilian Duplessis have a reputation for their “immortal”, age‐worthy wines and are an excellent reference for the greatness of Chablis. One of the only organic estates in Chablis, their self-proclaimed “best fruit” comes from the ‘Les Clos’ vineyard sitting right in the middle of the property – we like to picture how bees protect their queen at the centre of the hive. Everything hinges on the unbeatable minerality, with preserved pears, psychoactive honey, underripe apricot, citrus melange & chewing a long piece of straw.
