An opulent, acid driven Jura chard that is so much more than the sum of its parts. The world famous wines of Bénédicte and Stéphane Tissot are prized, punctuated & polished. Working with as minimal cellar intervention as possible and great biodynamic care in the vineyard, they represent the height of Jura excellence. Called ‘Patchwork’ as this bottling is made up of the (under 20 to OLD vine) grapey bits n’ bobs leftover from all of their single vineyard cuvées, and just a touch of new oak (10%) puts a plush wash over the whole scene. Teensy bit of smoky reduction, grilled sesame, runny honey, whipped lemon, yeasty minerality, cashew cream & ripe fleshy apple. Enjoy with anything resting on a pool of tonnato.
