COS (Cilia-Occhipinti-Strano), was founded in 1980 as a humble project between friends, but soon became one of the world's most iconic wineries. COS revolutionized quality wine production in Sicily and inspired the next generation of producers to question the harmful sprays and manipulations they were steered towards in winemaking school. ‘Cerasuolo di Vittoria’ is made from grapes grown in the ancient areas of Ragusa, Caltanissetta and Catania, where viticulture has thrived since the 3rd Century B.C.! FUN FACT! Cerasuolo (meaning “cherry-red") di Vittoria is a fresh, but endlessly complex style of red wine dating back to the founding of the Sicilian city of Vittoria in 1607! An old-vine blend of tart and fruit-forward frappato (40%) and tannic, savoury-leaning nero d’avola (60%) plucked from sandy-clay soils, rich in iron and sitting over limestone. The grapes were destemmed, macerated for 20 days in concrete tanks and aged for 12 months in old oak, followed by 12 months in concrete and then a final 12 months in bottle before being sent off into the world. Black cherries with pits, pressed flowers, stone wall, craisins, terracotta, fennel, smoked sweet spices, sea salt, blackberry mash & tobacco sachet. Pour alongside a hefty eggplant parm.
