Mick and Jeanine Craven work exclusively with organic farmers in the hot climate of Stellenbosch, a particularly challenging prospect as where weeds are plentiful & water is scarce. It’s well worth the effort, though— using whole clusters, gentle extractions & neutral oak, they’re able to make pure & pristine wines that are practically poetic in their many propositions. Coming from their newest vineyard, this Chardonnay was whole-bunch pressed to tank & racked into neutral barrels for fermentation and élevage. Madagascar vanilla, unripe pineapple, white florals & the gentlest stonefruit note with a salty-savoury finish. Drinks like throwing yourself onto a big, king size hotel bed.
