A savoury, earthen and RARE zero-zero flagship red to not only knock your socks off, but make you forget what a sock even is. May we presesent, a beloved pillar of French natural wine available for the first time in Ontario. Dard et Ribo were part of the first generation of dedicated sans-soufre, or WITHOUT SULPHUR, winemakers in the early 90’s – and we are eternally grateful! Winemakers René-Jean Dard and François Ribo met in wine school in Beaune and have been together ever since. Today their 8.5 hectares of (uncertified) organically cared for land holds primarily syrah vines, mainly across the AOCs Crozes-Hermitage, Saint-Joseph and Hermitage. Sourced from several plots of syrah, the grapes were picked by hand, 90% destemmed and fermented on skins for 20 days before being aged for 12 months in large barrels sorting themselves out. Plum meets açai, black and white pepper, warm blackberries squished between fingers, horse saddle, cured meat, sweet cola spices, olive, ash & graphite minerality. Enjoy alongside morcilla and a strong beam of sun.
