Dard et Ribo were part of the first generation of dedicated sans-soufre, or WITHOUT SULPHUR, winemakers in the early 90’s – and we are eternally grateful! Winemakers René-Jean Dard. . .

A mineral, generously nuanced and RARE zero-zero Rhône syrah for those looking for an education! A true idol of natural wine available for the first time in Ontario. Dard et Ribo were part of the first generation of dedicated sans-soufre, or WITHOUT SULPHUR, winemakers in the early 90’s – and we are eternally grateful! Winemakers René-Jean Dard and François Ribo met in wine school in Beaune and have been together ever since. Today their 8.5 hectares of (uncertified) organically cared for land holds primarily syrah vines, mainly across the AOCs Crozes-Hermitage, Saint-Joseph and Hermitage. The syrah comes from a mix of sandy granite, quartz and red clay soils in St. Joseph, were picked by hand and left whole cluster for a short maceration and then aged in wood barrels for 10-12 months dancing with itself. Blueberry picking, beach roses, juniper, sour cherry jam, black pepper crushed on slate, sage brush, natural process Ethiopian coffee, cacao coated fennel seeds, iodine, antlers & all on a gummy tar backdrop. Pour alongside Stag Dance by Torrey Peters and summer sausage from your local butcher.
