Lambrusco Ruberti, Lombardy, Italy
Like a new star appeared in the bubbly red sky and formed a freshly twinkling constellation for us to contemplate our existences over. Brand new to Ontario, meet Villa Picta! Young, passionate winegrower and maker Paolo Pasini, and author/NYC *star* sommelier Amanda Smeltz have teamed up and are defining lambrusco in their own terms. Paolo’s three hectares of familial river valley vineyards sit in southern Lombardy at the intersection of Veneto and Emilia-Romagna, focusing on the regional varieties in the Lambrusco family that deserve their minimal-intervention moments in the sun and welcoming non-regional grapes that they believe make perfect sense to plant. FUN FACT! Ruberti is one of lambrusco’s hyper-specific expressions of place, only grown in Mantova! Spritely bubbles that burst like flowers opening, freeze dried strawberry, wilted fennel meets blackberry bramble catches, shells, French soap on a rope & a fierce, salty acidity. The pair recommend enjoying with tortellini en brodo, and don’t forget to give the broth a little sip.
Pasta, Lazio, Italy
Give your forearms a break from rolling dough with this rare offering from one of the world’s most beloved natural wineries! Quickly catapulted to cult status, Le Coste is run by winemakers Gianmarco Antonuzzi and Clémentine Bouveron who tend 14 hectares of prized volcanic vineyards that thrive amongst olive groves and chestnut trees. Sitting pretty just outside of Rome, the extremely-hard-to-find food offerings from the farm show just how multi-talented they truly are. Mezzi paccheri is a short and tubular shape that originates from the Campania region of Italy, is smaller than traditional paccheri (mezzi means half) but larger than rigatoni, and designed to hold chunky sauces! Enjoy your mezzi pacheri as a ragu, seafood medley or with mushrooms and cream. Buono Appetito!
Languedoc-Roussillon, France
A rare and deeply flavoursome VINEGAR! On the heights of Banyuls-sur-Mer, the jewel of the Pyrénées-Orientales, the established vinaigrerie La Guinelle ferments and cultivates natural wines, transfiguring them into exceptional vinegars for tables around the globe. In 2022, Chandra Brune took the reigns after working 10 years alongside its founder. With her, this centuries-old profession continues with the utmost passion. Made with a Clos des Vins D'Amour muscat petit grains from the Dornier family in Roussillon, these grapes were chosen for their finessed aromatics and fruitful sweetness. FUN FACT! This is a double fermented vinegar, first fermented into wine and then a secondary, bacterial fermentation took place to transmute it into a vinegar! Wafting white flower medley, summer honey, crisp minerality & sun-warmed apricot. Add to crab salad, or use to make all manner of vinaigrettes for your signature seasonal vegetable salads – tomatoes, cabbage or kale LOOK OUT!
