A levitating, petal pink & dry-as-a-saltine Sancerre rosé made from peachy pinot noir grown on old vines – meaning: the vines are wiser and have no problem teaching the grapes a thing or ten about how we used to do things. This light & bright sipper from French family affair Domaine Bailly-Reverdy is like signing up for a continuing ed class in romantic architecture to stunt on your crush only to fall for the love of knowledge instead! FUN FACT! The hilly vineyards in Loire Valley have stayed in the Bailly-Reverdy family since the turn of the century. They’re currently helmed by Franck and Aurelien Bailly, who, in their usual mien of striped Breton shirts, round glasses and puffer vests / jackets, are textbook French winemakers to the letter. Though not certified, they practice organic production. In addition to general sustainable practices, they plant rows of grass and herbs between the vines in place of herbicides, which makes it make all the more sense that this rosé smells like a mid-2010s Coachella flower crown. Have it with an arugula salad that’s mostly a vehicle for pink peppercorn marinated chèvre – and pls for the love of goodness lay on a thick, emphatic accent when you say ‘chèvre.’
