The appellation controllée ‘Abymes’ comes from the French word “abimé”, meaning “broken”, and refers to the fragmented stones that tumble down during avalanches here in the Alps! These cool-climate grapes were macerated for 12 days to pull supple tannins and capture ethereal aromatics. Ripe raspberries, cherry blossoms, bay tree meets baking spice, red apple skins, touch of soil, mountain minerality & the softest, worn, buttery leather tannins. Pour alongside duck jerky.
