A crispy, mineral and textbook-pulled sancerre for our classic cravers. Starting in 1683, Domaine Sautereau has crafted wines for 10 generations in the southern commune, Crézancy-en-Sancerre. Winemaker David Sautereau has run the estate since 1997, today watching over their 20 hectares that spread across three villages. The land is planted primarily to sauvy blanc, across clay-limestone, or  “Terres Blanches”, marls and rocky limestone, or “Caillottes”, and red sandstone, or “Terres Rouges” soils – #GEOLOGYISCOOL. Grapefruit and elderflower tonic, green mango, supple, stony minerality, pear mash, iodine, boxwoods & swaying grass. Pour alongside asparagus and Gunn’s Hill ‘Sweetgrass Buffalo’ water buffalo cheese stuffed puff pastry tarts.
