A stunningly botanical, Boreal-forest-born STILL TEA that feels like being welcomed into the kingdom of the woodland-beings. Driven, knowledgable and spirited winemaker (and tea potion master?) Drea Scotland’s project Drinks Farm is utterly delightful, driven by curiosity & extending from hybrid grapes to raw honey to maple syrup, AND NOW to tree bits n’ plant bobs. We are so happy to be taken along for this delightful and evolving ride as she is moved to showcase local products in new and uniquely TASTY ways. ‘Forest Water’ is a steeped brew of foraged dried ingredients including: resinous, subtly lemon-y balsam, sweet-meets-bitter tamarack, tangy, rosemary-esque white pine, menthol-y, potent white cedar, floral, lightly fruity and minty labrador tea (an evergreen shrub which grows in North American bogs) and supremely citric spruce tips. Cedar comes through like a newly constructed sauna, tiny sweet flowers dapple the nose and palate, soft acidity pulls at your salivary glands, chlorophyll power, mix of mints, wind over the bullrushes, through the trees of sing Hermit Thrushes & the feeling of serenity when curling up in a ball inside of a thicket.
